Golden Kitchari

A soft, soupy one-pot of rice and mung dal — the classic comfort meal of Ayurvedic kitchens. Easy to digest and gently nourishing.

Ingredients

  • ½ cup white basmati rice, rinsed
  • ½ cup split yellow mung dal, rinsed
  • 1 tbsp ghee (or oil)
  • 1 tsp cumin seeds
  • 1 tsp ground turmeric
  • 1 tsp grated fresh ginger
  • 4–5 cups water
  • Salt to taste; fresh coriander to finish

Method

  1. Warm ghee in a pot; add cumin seeds until fragrant.
  2. Stir in turmeric and ginger for a few seconds.
  3. Add rinsed rice and dal; stir to coat.
  4. Pour in water, bring to a boil, then simmer partly covered ~25–30 min until soft and soupy.
  5. Salt to taste; add more water for a thinner porridge. Finish with coriander.
