Golden Kitchari
A soft, soupy one-pot of rice and mung dal — the classic comfort meal of Ayurvedic kitchens. Easy to digest and gently nourishing.

Ingredients
- ½ cup white basmati rice, rinsed
- ½ cup split yellow mung dal, rinsed
- 1 tbsp ghee (or oil)
- 1 tsp cumin seeds
- 1 tsp ground turmeric
- 1 tsp grated fresh ginger
- 4–5 cups water
- Salt to taste; fresh coriander to finish
Method
- Warm ghee in a pot; add cumin seeds until fragrant.
- Stir in turmeric and ginger for a few seconds.
- Add rinsed rice and dal; stir to coat.
- Pour in water, bring to a boil, then simmer partly covered ~25–30 min until soft and soupy.
- Salt to taste; add more water for a thinner porridge. Finish with coriander.
